FPS issues with cutscenes AND gameplay seems to be gone, but wasn't looked into close enough, and there's no patchnotes to tell the details about it.

Damn, i just tested the game and the cutscenes really run at 60 FPS now. This is pretty cool, we never had official support for 60 FPS cutscenes in SR The Third before and the fanmade CE/SpecialK methods caused some issues in both the original and Remastered. It's a shame they didn't even bother to post a patch changelog.
I don't own this game, but it appears that an old FOV mod for the original SRTT (https://www.gog.com/forum/saints_row_series/sr3_fov_fix) still works in this game. Is this true?

I made a similar post after independently trying the fix, I can verify it works.
The mod doesn't generate the file from the new exe by itself, but the old file can be copy pasted and it will work fine.

Which mod you tried? The old one in this talk page, or the FOV Editor linked from the article?
In the case of latter, I've looked the source code of FOV Editor and I'm certain it doesn't work if the tool cannot find "SaintsRowTheThird.exe" in the same directory. If SRTT:Remastered's exe file is NOT named like that, maybe you can rename it temporarily to make the FOV Editor work.
